Tropicual De Vega Bio Sierra de Cazorla, Andalusia — early harvest Picual

Picked early, when the olives are still green and the oil is at its most intense.

Tasting notes: Aromas of grass, tomato leaf, and artichoke. Medium-high fruitiness, with a well-integrated bitterness and a pronounced peppery finish.
Food pairing notes: Pair with bitter greens — asparagus, rocket, chicory, artichoke. Also excellent over fatty fish like sardines or mackerel, grilled chicken, aged pecorino or manchego, and surprisingly good over vanilla ice cream or cheesecake.

 

Tropicual Everyday Andalusia, Spain — Picual

A later, riper harvest from the same region. 

Tasting notes: Medium-high fruitiness and bitterness, with aromas of tomato leaf, basil, thyme, and berries. Bolder and more assertive — built for cooking as much as finishing.

Food pairing notes: Pair with white beans, lentils, chickpeas, aubergine, charred and roasted vegetables, grilled lamb or chicken, aged cheese, and dark chocolate. Pour it over hot food as a finisher — the heat opens up the aromas while softening the bitterness.
